  • Fork To Fit, a restaurant chain that offers ready to eat meals and protein shakes, opened its 9th location in Edinburg on McColl Road and Freddy Gonzalez Drive. Co-founder and CEO Alex Velasco said the chain will expand to major Texas cities soon to provide more healthy dining choices.  KRGV

  • The Cameron County Sheriff's Office wants help finding 41-year-old Jacobo Hernandez Hernandez who allegedly shot Christopher James DeLeon several times in Laguna Heights in 2023 and then fled to Mexico's Veracruz region — anyone with tips should call Crime Stoppers at 956-350-5551 — officials said.  Fox Rio Grande Valley

  • South Texas College culinary instructor and Texas Department of Agriculture Ambassador Nadia Casaperalta prepared ceviche — emphasizing the value of locally caught shrimp from the Gulf of Mexico. She explained that choosing sustainable seafood helps support Texas shrimpers — offering fresh flavor for local kitchens.  KRGV

ECONOMY NEWS

  • Greater Brownsville Incentives Corporation CEO Gilberto Salinas said that the Rio Grande Valley is growing fast as big companies like SpaceX and LNG plants show interest in our area — a sign of major change. His agency is planning $3 billion in top projects to be announced soon — moves that aim to bring more jobs and growth to our community.  Rio Grande Guardian

GOVERNMENT NEWS

  • City Manager Isaac J. Tawil said McAllen’s strong planning and fiscal management have spurred local growth and cross-border trade, with the city recording over $40 million annually through trade and a record reach at the International Airport. The City expects upcoming projects — including an $88 million international bridge expansion and a $76 million urban ecology center opening in 2026 — to boost the local economy further.  Rio Grande Guardian
  • The Hidalgo County Sheriff's Office held a Fallen Officer's Ceremony Tuesday to honor six deputies who lost their lives in the line of duty — including narcotics investigator Manuel Segovia, who was shot while serving a search warrant. Sheriff Eddie Guerra said the event continues the department's effort to remember those who made the ultimate sacrifice.  KRGV
  • Citrus farmer Jesse Lozano said he now faces an uncertain market after federal programs that helped schools buy local produce during the pandemic ended. He will look for new customers as schools may choose cheaper wholesale produce.  KRGV

HEALTH NEWS

  • The FDA approved the Teal Wand, the first at-home screening device for cervical cancer, and shipping will begin in June. The device requires a prescription and the company is talking with insurers—medical experts say it could improve screening access.  Fox Rio Grande Valley
